Vegetarian Split Pea Soup

Ingredients
  • 8 cups vegetable broth
  • 2 cups dried green split peas, rinsed
  • 1 medium yellow onion, medium diced
  • 3 medium carrots, peeled and medium diced
  • 3 celery ribs, medium diced
  • 1 russet potato, peeled and medium diced
  • 2 garlic cloves, minced
  • ½ teaspoon dried thyme
  • ½ teaspoon dried basil
  • ¼ teaspoon ground parsley
  • 1 or 2 bay leaves
  • kosher salt and pepper to taste
Instructions
  1. Combine all ingredients in a large pot over medium heat. Bring to boil, reduce heat to low, cover and let simmer for an hour. Season with salt and pepper to taste.
  2. If the soup is too thick, add more broth, or reduce amount of peas.
