Tabbouleh with Apples, Walnuts, and Pomegranates

Ingredients
  • 1 cup flat leaf parsley, chopped
  • ½ cup fresh pomegranate seeds
  • 1 cup diced, cored, and unpeeled apples (preferably Pink Lady)
  • ½ red onion, diced
  • 1-2 cups cooked quinoa
  • 3 tablespoons honey
  • ¼ cup lemon juice
  • ½ cup extra virgin olive oil
  • kosher salt
  • 1 cup walnuts, rough chopped.
Instructions
  1. Mix the parsley, pomegranate seeds, apples, red onion, and cooked quinoa in a medium bowl.
  2. In a small bowl, stir in the honey, lemon juice, and olive oil to creat a dressing. Pour over the quinoa mixture, season with salt and mix well.
  3. Stir in chopped walnuts, serve and enjoy!
