1 jar of tomato sauce of choice (homemade or store bought)
¼ cup fresh mozzarella, sliced into rounds
¼ cup chopped basil
4 slices of provolone cheese
Instructions
Preheat oven to 400 degrees. Pound chicken with meat mallet until breasts are ½" thick. Pat dry with paper towels and season with salt and pepper.
Beat eggs in a shallow bowl. Set aside. Mix breadcrumbs and half the grated parmesan in a separate bowl. Set aside. In a shallow dish, place flour. Set aside.
Dredge chicken through flour, then dip into bowl with beaten egg, then into breadcrumb mixture.
Heat olive oil in a skillet on medium-high heat. Cook until chicken is golden, then place chicken on a lined baking sheet. Top each breast with a generous amount of tomato sauce. Layer each breast with equal amounts of mozzarella cheese, fresh basil, and top with provolone slice. Sprinkle parmesan cheese on top and drizzle with olive oil.
Bake in the oven until cheese is browned and bubbly, and chicken is cooked all the way through, about 15-20 minutes.
