Meatloaf and mashed potatoes have always been my go-to comfort food. My mom makes pretty killer meatloaf & mash that I’ve tinkered with it over the years to make it my own.
I typically roast broccoli or green beans, seasoned with a drizzle of olive oil, kosher salt and freshly ground black pepper. The greens are roasted on the same sheet pan right alongside the meatloaf, once everything goes in the oven, and I begin the sweet potato mash, and everything will be done by the time the timer goes off!

Meatloaf & Sweet Potato Mash

Ingredients
- 1 pound ground beef (85/15% fat)
- 1 large egg
- ¼ cup chicken broth
- ¼ cup panko breadcrumbs
- 1 large shallot, small diced
- 3 garlic cloves, minced
- kosher salt and freshly ground black pepper
- 1 pound broccoli or vegetable of choice
- 2 pounds sweet potatoes, peeled and cut in half crosswise
- 4 tablespoons unsalted butter
- 1 tablespoon fresh rosemary, chopped
Instructions
- Heat the oven to 400-degrees. In a large mixing bowl, add ground beef, egg, broth, breadcrumbs, shallot, and garlic. Season with salt and pepper to taste. Mix well until all ingredients are combined.
- Form meatloaf mixture into a long rectangular shape. Place on a foil lined baking sheet.
- Add vegetables to the same sheet pan, drizzle with olive oil and season with salt and pepper to taste. Roast until internal temperature of meatloaf is at least 145 degrees (about 20-25 minutes).
- Meanwhile, add sweet potatoes to a boiling pot of water. Cook until potatoes are fork tender and drain. Place potatoes back in pot, add butter, and rosemary, and season with salt and pepper to taste. Using a potato masher, mash potatoes until desired consistency is achieved.
- Allow meatloaf to cool, then slice into 1" pieces. Enjoy!
