I love finding new recipes and absolutely love when my clients say they want to introduce their kids to new things, like lentils. I was asked to come up with a any side dish of my choosing featuring lentils. This is what I found, and what my #cleanplateclub loved!
It’s pretty easy to make too, which is always an added plus. It’s a fantastic snack, appetizer, or a meal in of itself.
Lentil Tabbouleh

Ingredients
- 1 cup green lentils
- 3 cups water
- 1 bunch spring onions, thinly sliced
- 1 cup cherry tomatoes, halved
- 1 bunch flat leaf parsley, chopped
- 1 large bunch of fresh mint, chopped
- 4 tablespoons olive oil
- kosher salt and freshly ground black pepper
- 1 lemon, juiced
Instructions
- Rinse the lentils, then cook in salted water until tender, about 15-20 minutes. Drain and set aside to cool.
- In a large mixing bowl, add the cooled lentils with the spring onions, tomatoes, parsley, mint and 4 tablespoons of olive oil, stir well to combine. Add the lemon juice. Season with salt and black pepper to taste.
