Recipe type: Poultry
Serves: 6
Ingredients
- 2 pounds boneless, skinless chicken thighs
- ½ cup soy sauce
- ½ cup honey
- 3 tablespoons tomato paste
- 3 teaspoons chili-garlic paste
- 5 garlic cloves, minced
- 2 tablespoons rice vinegar
- 2 tablespoons cornstarch
- sesame seeds for garnish
Instructions
- Place chicken in the bottom of large slow cooker. In a medium bowl, whisk together soy sauce, honey, tomato paste, chili paste, garlic, and rice vinegar. Pour over chicken. Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours. If available, flip the chicken over once halfway through to coat both sides.
- Once finished cooking, remove chicken onto a plate. Whisk in cornstarch, cover and cook on high for 15 minutes to thicken the sauce.
- Meanwhile, use two forks to shred the chicken. Place back into the slow cooker, stir to coat. Serve over rice sprinkled with sesame seeds for garnish.
