This recipe comes from one of my very talented co-workers, Lydia. I’m definitely adding this to our Rosh Hashana rotation, as it works so well, ingredient-wise, and beyond delicious! I hope you enjoy this as much as I do!
Tabbouleh with Apples, Walnuts, and Pomegranates

Ingredients
- 1 cup flat leaf parsley, chopped
- ½ cup fresh pomegranate seeds
- 1 cup diced, cored, and unpeeled apples (preferably Pink Lady)
- ½ red onion, diced
- 1-2 cups cooked quinoa
- 3 tablespoons honey
- ¼ cup lemon juice
- ½ cup extra virgin olive oil
- kosher salt
- 1 cup walnuts, rough chopped.
Instructions
- Mix the parsley, pomegranate seeds, apples, red onion, and cooked quinoa in a medium bowl.
- In a small bowl, stir in the honey, lemon juice, and olive oil to creat a dressing. Pour over the quinoa mixture, season with salt and mix well.
- Stir in chopped walnuts, serve and enjoy!
