VARIETY! A lot of people get caught up in this idea that we need to cook a wide variety of complicated recipes each week. Which in turn, makes the entire meal planning process much more complicated than it needs to be.
In a lot of other countries, it’s quite common to eat the same handful of meals over and over. In fact, as humans, we’re drawn towards comfort and familiarity, which means we’re likely to want to eat the same meals over and over again. And that’s OK! It’s ok to eat the same things multiple lunches or dinners in a row.
Pro Tip of the Week: choose three simple recipes per week. When shopping and cooking, make sure to double the recipe, so each dish yields two nights worth of dinner. Bam! That’s six nights worth of dinner with just three simple recipes and half the cooking.
