I know split pea soup is supposed to be cooked with a ham bone, but for this one, I’m going vegetarian. If you want extra flavor, by all means, add it in!

Ingredients
- 8 cups vegetable broth
- 2 cups dried green split peas, rinsed
- 1 medium yellow onion, medium diced
- 3 medium carrots, peeled and medium diced
- 3 celery ribs, medium diced
- 1 russet potato, peeled and medium diced
- 2 garlic cloves, minced
- ½ teaspoon dried thyme
- ½ teaspoon dried basil
- ¼ teaspoon ground parsley
- 1 or 2 bay leaves
- kosher salt and pepper to taste
Instructions
- Combine all ingredients in a large pot over medium heat. Bring to boil, reduce heat to low, cover and let simmer for an hour. Season with salt and pepper to taste.
- If the soup is too thick, add more broth, or reduce amount of peas.
