Brown Sugar Salmon with Strawberry Cucumber Relish

Ingredients
- ⅓ cup packed brown sugar
- drizzle of olive oil
- 1 teaspoon ground mustard
- 1 teaspoon ground allspice
- pinch of kosher salt
- 4 salmon filets
- RELISH
- 1 tablespoon minced fresh mint
- 1 tablespoon vegetable oil
- 1 tablespoon lemon juice
- 2 teaspoons grated lemon zest
- pinch of sugar
- 1 cup freshly chopped strawberries
- 1 small cucumber, finely chopped
- ½ red onion, minced
Instructions
- In a small bowl, mix the first five ingridients; rub over flesh side of salmon. Allow to marinate for up to 1 hour.
- Meanwhile, in another bowl, mix mint, oil, lemon juice, lemon zest, and sugar. Add strawberries and cucumber, mix well.
- Cook salmon via your preferred method. Serve with relish.
